2 tbsp Smart Balance margarine1 large onion, chopped1/2 medium green bell pepper, chopped2 lbs lean ground chuck1 30 oz can whole tomatoes1 1/2 cups cooked brown rice1/2 tbsp chili powder, or to taste1/2 tsp Salt Sense1/4 tsp ground black pepper4 slices (1 oz ea) American cheese
1. Preheat oven to 350 degrees. In large heavy skillet, saute onion and green pepper in margarine until tender.
2. Add ground chuck and salt and pepper till thoroughly browned. Add other ingredients except cheese; mix well. Cook over low heat until mixture is thoroughly heated.
3. Turn into ungreased 2 quart casserole (13x9x2 inch glass dish). Top with cheese slices. Bake 40 minutes or until bubbly and cheese has melted.
