Chewy, Gluten - Free Pizza Crust

Ingredients
2 tablespoons rapid rise yeast1 tsp sugar1 1/3 cups brown rice flour1 cup tapioca flour4 tsp guar gum1 tsp salt2 tsp unflavoured gelatine powder2 tsp dried Italian seasoning 2/3 cup warm, plain rice milk2/3 cup warm water2 tsp olive oil2 tsp apple cider vinegar
Directions
Preheat oven to 425 degrees.
In large bowl, blend together dry ingredients (yeast through Italian seasoning).
Stir in rice milk and water, blending well.
Add oil and apple cider vinegar and beat to form a dough.
Grease and flour a pizza pan or cookie sheet (just like you grease and flour a cake pan).
Pat down dough in a thin layer on the pan with lightly oiled hands.
Bake 10 minutes, then remove from oven and add toppings.
Return to oven and bake for another 20 minutes, until crusty and completely baked through.

    1 1/3 cups brown rice flour
