Spinach and Pear Salad with Dijon Vinaigrette

Ingredients
2 tablespoons water1 1/2 tablespoons red wine vinegar1 tablespoon olive oil1 tablespoon honey2 teaspoons Dijon mustard1/4 teaspoon black pepper2 pears, cored and sliced8 cups Fresh Express Baby Spinach1/2 cup blue cheese, crumbled1/4 cup red onion, thinly sliced
Directions
1. In a small bowl, whisk together the water, vinegar, olive oil, honey, Dijon mustard, and black pepper.

2. In large bowl, add the pear slices and 2 tablespoons of the vinaigrette and toss to coat.

3. Add remaining dressing, spinach and onion and toss to coat.

Serves 4.

    I make this salad a lot and it's always a hit! If you can spare the extra calories, add crumbled goat cheese on the top too -- the creaminess of the cheese goes great with the pears. :-) - 1/27/09

    Delicious. This salad is exciting compared to the same old, and the dressing is easy to make. I sometimes add in a couple of tablespoons of sliced almonds, dried cranberry and have also make it with canned mandarine oranges if I don't have pears on hand. - 7/5/09
