Pork Chops with Applesauce

3/4 cup unsweetened applesauce1/4 tsp ground ginger1 tbsp low sodium soy sauce1 tbsp vegetable oil4 4 oz lean boneless pork chops1 cup cooked brown rice
1. In small bowl combine applesauce, ginger, soy sauce. Set aside.
2. Spray large skillet with cooking spray. Heat over medium heat; add vegetable oil. Add pork chops and brown on both sides for about 7-8 minutes.
3. Ladle applesauce mixture over chops. Cover, reduce heat, and simmer over low heat for about 20 minutes, or until chops are thoroughly cooked through and tender. Serve with rice.
