Spanish Roast Pork Tenderloin

Ingredients
1 lb pork tenderloin, remove extra fat1 tsp garlic, mashed to paste1 tbl extra virgin olive oil1/2 tsp ground cumin1/4 tsp ground coriander1 tsp smoked paprika1/4 tsp ground ginger1/4 tsp turmeric1/4 tsp black pepper1 tsp lemon juice and zest or red wine vinegarsalt and pepper to taste
Directions
Season pork with salt and pepper.

Mix garlic with pinch of salt. Add remaining ingredients, stir to mix. Spread all over pork. Let sit for 15 minutes to overnight.

Grill, saute, or roast meat until done.
