Caramel Apple Salad

  • Number of Servings: 8
Ingredients
4 medium apples1 small box sugar free fat free instant pudding mix, butterscotch32 oz fat free plain yogurt1/2 cup unsweetened applesauce
Directions
Core and dice apples, place in water with some lemon juice (optional, prevents browning).
Mix yogurt and pudding mix together.
Add to apples and mix well.
Add applesauce mix well.
Refrigerate overnight.
Makes a solid 8 cups.

    I used 2 - 6 oz containers of vanilla yogurt plus 1/2 container of fat free Cool Whip in place of 32 oz of yogurt. It was great! This will definitely be a regular addition to our meals. It is easy and so good! What a great way to add fruit to our day. - 1/9/10

    I have made this recipe before with fat free cool whip instead of yogurt and crushed pineapple instead of applesauce. My mom got it from a WW meeting and they said it's only 1 point. My kids love it even if it is healthy lol! Yummy! - 2/18/09

    Made it for our Super Bowl party yesterday--a big hit, very yummy, very easy... and luckily lots left over for us!

    I did think it either needs less yogurt, or more apples; I used less yogurt and one more apple and it still seemed a little too heavy on the "dressing" part. - 2/4/08

    This had an amazing taste. Only 2 Weight Watchers points per cup. I added an extra box of pudding mix. Make sure to wash your apples extremely well or peel them. The preservatives leave a horribly chalky after-taste. Great salad to bring to a pot luck!!! - 3/6/08

    It was delicious. I used plain Greek yogurt instead of reg yogurt so it was very thick but tasted like butterscotch mousse with apples. It also upped the protein. - 1/26/13

    I made with plain greek yogurt, AWESOME! Doubled receipe, used 3 containers of fage plain yogurt apx. 54oz, a bit shy of recommended but was more than enough yogurt. Made enough to take to pot luck tonite and have left overs for family. THEY LOVED IT! Garnished top of pan for pot luck with walnuts. - 4/29/12

    I thought this was good. I used Dannon Light Vanilla yogurt and Gala apples. I thought it seemed like a lot of yogurt, so I only used 2 cups, and was glad I did. I'm not sure I will make it again, but it's definitely worth trying, IMO. - 3/15/09

    Good way to eat some apples; hubby didn't like it that much. I used Granny Smith apples and wondered if I should have used sweeter apples - with the yogurt, this was a little tart. I added some walnuts which added interest and crunch - and calories. - 2/20/09

    I make this recipe with a tub of Cool Whip Free and Crushed Pineapple instead of Applesauce. I am not sure, but I think that might help to bring down the sodium!! This is always a big hit when I take it to parties. - 1/9/09
