Tofu Mac&Cheese

Ingredients
10-12 oz. silken or soft tofu2 tbsp butter or margarine1.5 cups of firmly packed grated or shredded cheddar cheese1 pkg macaroni noodles
Directions
Cook macaroni noodles as usual

Blend tofu until smooth in food processor or blender
Mix blended tofu, cheddar and margarine in sauce pan; heat until cheese is melted

Add sauce mixture to cooked noodles

Makes 6-8 servings
