Cabbage Soup

Ingredients
6 large gren onions, sliced1.5 green peppers, chopped1 can diced tomatoes11 baby carrots, sliced1 bunch of celery, sliced1/2 head of cabbage, cut into bite-sized pieces1 pckg onion soup mix1-2 bouillon cubes (optional)1 - 48oz can VI juice 8 cups waterSeason to taste with pepper, parsley, garlic
Directions
Saute green onion with cooking spray in large stock pot. Add green pepper, cabbage, celery, carrots to pot. Add canned tomatoes, bouillon, soup mix, V8 and water. Cover and heat on low for a minimum of 2 hours. I let mine go all day. season to taste.
