Veggie pizza-fries

.5 cup green bell peppers, cut into strips.5 cup yellow bell peppers, cut into strips.5 cup red sweet bell peppers, cut into strips.5 cup sliced or whole mushrooms.25 cup spaghetti sauce of your choice2 oz mozzarella cheese, part skim, shredded
Slice up the peppers into strips about the thickness of french fries. Pile them on a plate, top with mushrooms and any other veggies you might like or have on hand, such as zucchini or broccoli.
Spoon a quarter cup of tomato sauce over the veggies, and top with 2 oz shredded mozzarella cheese. Season with some basil, oregano, salt & pepper, etc if you wish - I like it plain or with a little garlic.
Pop it in the microwave for about 2 minutes, and presto! A great snack or side dish.
Makes 2 servings.
btw - even my veggie-avoiding boyfriend loved this, he said he enjoyed it *more* than actual pizza fries.
