Amaranth with Herbes de Provence for 2

Ingredients
1/2 cup of amaranth grain1.5 cup of vegetable broth1.5 Tbsp of Herbes de Provence1 tsp of garlic powder1 tsp of onion powder1 tsp of kelp powder (salt substitute)1 Tbsp of margarine
Directions
Bring broth and spices to boil in medium stockpot. Add amaranth, reduce heat to medium-low. Add margarine. Simmer for 25 minutes or until all broth is absorbed. Serve hot.
