Boys and Girls Apple - Carrot Pancakes

1 ½ cups flour1 cup whole wheat flour1 ½ tbsp baking powder1 ½ tsp cinnamon¼ tsp allspice¼ tsp salt2 eggs, lightly beaten¼ cup brown sugar2 cups low-fat, plain soy milk2 tsp vanilla2 large carrots, finely grated 1 large apple, finely grated
Preheat a griddle pan, grease with PAM.
In a bowl, whisk together flour, baking powder, cinnamon and salt.
In another bowl, whisk together eggs, brown sugar, milk and vanilla.
Stir the wet mixture into the dry ingredients, then add carrots and apples.
Mix just until moistened - a few lumps are okay.
Pour batter by 1/4 cupfuls onto the greased griddle.
Flip when bubbles appear on the top of the pancakes, finish cooking on the other side.
