Zesty Low Fat Potato Salad

4 cups chunked, Boiled potatoes1 large Hard Boiled Egg, chopped1/2 cup diced, raw Onions1 tsp. *Gluden's Spicy Brown Mustard (may add more to taste)1 tbsp. *Hellmann's Tartar Sauce1 tbsp. Lemon juice7 tbsp. fat free mayonnaiseBlack Pepper - optional.
Only boil potatos 5-6 minutes so they are still firm but not crunchy. Immediately remove from heat & drain. Rinse and place in very cold water, stirring gently with hands, to cool completely. Thoroughly drain again, then gently pat with paper towel to remove excess water. Place in freezer 10-15min. to cool.
Stirring gently, add the other ingredients. Refrigerate & serve cold.
I use the term GENTLY several times so the potato salad does not become mashed potato salad!

I like to use as the "main" high cal. dish with something very low cal. such as fat free hot dogs, but often have 1/2 cup serving for 1/2 the calories.
