Bread Pudding

7 slices whole-wheat bread1/2 cup Splenda1 tsp cinnamon1/4 tsp salt3 egg whites1 cup skim milk1 tbsp light stick margarine, melted1/2 cup raisins
Spray cooking spray in loaf pan.
Tear bread in pieces and put in pan, add raisins. Set aside. Melt margarine and mix with egg whites, Splenda, skim milk, cinnamon and salt.
Pour this mixture over bread and raisins and mix well.
Bake at 350 degrees for 30 minutes or until lightly browned.

A little bowl of heaven! I've never made or eaten bread pudding so I wasn't even sure what I was aiming for. I used fresh blueberries as they're cheap and in season now and doubled the cinnamon.I also threw in some WW english muffins as I didn't have enough bread.Now its the NEW craving in our house - 7/29/09

That Splenda is being marketed so freely and pervasively is most concerning given that there are currently NO large studies underway researching the safety of this artificial sweetener.

Used part raisins, part cranberries, one whole egg instead of 3 egg whites,agave syrup instead of spenda and almond milk. Great way to use up some whole wheat dinner rolls! I've been making bread puddding for over 45 years. I lost my own recipe and have been looking for one to replace it. I wish I could say it was good, but I had an isssue with the recipe. The ratio of bread to liquid ingredients was off. Still, tasty, but not what I'm used to. - 4/10/10

I don't measure my liquid. I just put the ingredients in the baking dish and then mix the eggs and milk together. I fill it to the top of the bread and bake it.
