Frittata

Ingredients
4 large eggs, beaten1/4 cup milk (i used 1%, but can substitute any % milk)1/2 a red bell pepper, chopped1/3 a red onion, choppedcheddar cheese to taste1 "pat" butter for pan
Directions
Over medium heat, melt a pat of butter in an 8" Frittata Pan (or other non-stick pan), Mix eggs and milk in bowl, pour into pan. Evenly spread cheddar, chopped onions and peppers over egg. Add seasoning if desired. Cover with other half of Frittata pan (or lid). Cook about 5-10 minutes, until downward facing side is cooked, it will easily separate from the pan. Flip the Frittata (using the frittata pan or a spatula), cook 5-10 minutes covered.

The Frittata method takes a bit of trial and error, but in any case you will have some good scrambled-esque eggs!
