oatmeal raisin muffins

Ingredients

1 cu rolled oats 1 cu greek yogurt (nonfat)1/2 cu milk (2%)1/4 cu honey1/2 cu applesauce (unsweetened)1 tsp vanilla2 eggs1 cu whole wheat flour6 tsp flasxseed meal3/4 cu raisins1 tsp cinnamon1/2 tsp salt1 tsp baking powder1/2 tsp baking soda
Toast oats in a non-stick pan until golden brown, stirring frequently (about 5 min)
Let oats cool
preheat oven/set to 375
Mix oats into yogurt
Add honey, applesauce, vanilla and eggs to oats/yogurt mixture
Mix remaining ingredients in 2nd bowl and stir well
Fold wet ingredients into dry
Resist urge to overmix, lumpiness is to be accepted
fill muffin tins (everyone says to 3/4 full, but mine were pretty much full and it was ok)
Bake for 20-25 min until edges seem golden brown and tops bounce back when lightly pressed.
Enjoy w/skim milk for more protein!
