Gluten-Free Buffalo Meatballs

1.5 lb. ground buffalo2 large eggs0.5 cup potato flour1.5 cups finely chopped fresh cilantro2 tsp salt0.5 tsp black pepper1.5 tbsp canola oil
This recipe makes sixteen (16) 1.5 oz. meatballs.
Place ground buffalo, eggs, potato flour, chopped cilantro, salt and pepper in large mixing bowl. Mix well. Roll meatballs (each slightly larger than a golf ball) and place aside on plate.
Heat canola oil in large frying pan on medium heat. When hot, gently place meatballs in pan (so they maintain their round shape). Stir/flip every 1-2 minutes so that the meatballs cook evenly. Cooking time is approximately 25 minutes or until the inside of the meatballs is no longer pink.
I like to eat mine with a serving of gluten-free spaghetti and marinara sauce.
