Black Bean Brownie

1 cup canned black beans, rinsed and drained1/4 cup black coffee, strong1/2 cup butter 4 oz bittersweet chocolate, 100 % cacao4 large eggs1 1/2 cups splenda1 tsp vanilla extract1/8 tsp salt2/3 cup all purpose flour1/3 cup food grade Diatomaceous Earth
Preheat oven to 350 deg F. Coat a 9 x 13 in baking pan with cooking spray. Line with aluminum foil and spray with cooking spray again.
In a blender or mini food processor, process beans with coffe until smooth, set aside.
Melt butter and chocolate in mircowave. This only takes about 45 seconds. Try 30 seconds, then another 20 or 25. If its still a little lumpy that's ok it will melt as it sits. Don't burn the cholcolate trying to melt it.
Im a medium bowl, uning an electric mixer, beat eggs and sugar until light and fluffy. With mixer onlow, add melted chocolate and butter, incorporate well. Add black bean mixture, vanilla and salt, mix well. Add flour, combine throughly on low speed.
Pour batter into prepared pan and bak until a tester inserted in center of brownies comes out clean, about 25 minutes. Remove pan to a cooling rack. After 10 minutes, remove brownies from pan by pulling up on foil and placing brownies on cooling rack to cool more. Cut into 24 pieces and serve
