Oven Baked Onion Rings

1 lg onion, cut into thick rings1/2 c whole grain flour1 c non-dairy milk, plain and unsweetened1 tsp apple cidar vinegar1/2 - 1 c panko bread crumbs
Preheat oven to 450F.
Mix flour and corn starch in bowl. Add 1/2 c non-dairy milk. Stir to combine.
Combine 1/2 c non-dairy milk and apple cidar vinegar. Add to flour mix. Stirl to combine.
Line a baking sheet with parchment paper.
Set up assembly line with bowl of flour mixture, bowl of bread crumbs, and onion rings. Dip onion ring into flour mixture first, then panko, then place on baking sheet. Repeat until all rings have been dipped and covered.
Bake 8 - 10 minutes. Remove from oven. Flip rings. Spray with cooking spray. Return to oven for 6-8 minutes or until golden brown.
Salt while hot.
Serve immediately.
