Spinach, Mushroom, Turkey Bacon Omelet

Ingredients
Spinach, fresh, .5 cup Jennie O Turkey Bacon - Extra Lean - 3 sliced dicedMushrooms, canned, .25 cup Onions, raw, 3 tbsp chopped*Colby and Monterey Jack Cheese shredded, 1 oz.*Extra Virgin Olive Oil, 1 tsp. Egg, fresh, 1 medium Egg white, 1 serving
Directions
Spray 8' skillet with non-stick cooking spray. Pre-heat over med. high heat. Add olive oil. Saute onions till clear, add bacon mushrooms and spinach. Cook till spinach is tender.Beat egg and egg white and add to skillet. When eggs are almost set sprinkle with cheese, cover and remove from heat. Let stand till cheese is melted.
