Meatloaf

Ingredients
1.5 lb of ground beef1 cup of baby carrots1 large onion1 large can peeled tomatoes in sauce1.5 c. bread crumbs2 T. Lee & Perrins Worcestershire SauceItalian SeasoningSalt and Pepper to taste
Directions
Preheat oven to 375°F. In a food processor pulse the tomatoes, carrots and onion until onion and carrot are minced. In a large bowl add the hamburger meat, the seasonings, and the minced vegetables - the mixture will be fairly moist. Add bread crumbs to bind - I use around 1.5 cups for this amount of meat. Form into 1 or 2 loaves and bake until cooked throughout, usually about 1 hour. The meatloaf will be fairly soft in texture.
