Sugar Free Meringue Cookies

4 egg whites1 cup Sucralose (adjust to taste)1 tsp. vanilla 1 tsp. almond extract1/4 c. chopped almonds1/4 c. semisweet chocolate mini chips Optional: Food coloring and salt to taste
Preheat oven to 350ª F. Line cookie sheet with foil or parchment. Set aside.
Beat egg whites until fluffy, gradually add sugar, (and salt, if used) vanilla and almond extract. Continue beating until soft peaks form. Fold in chocolate chips and nuts.
Drop by teaspoon onto covered cookie sheets. Bake 10 minutes. (Do not let cookies start to brown.) Turn off heat, and leave cookies in closed oven until cookies are dry, generally at least 4 hours or overnight.
