Chocolate Flax Muffins (gluten free)

1/3 cup water3 large eggs1 stick butter3.5 tsp Truvia (or 1/2 cup of sugar)1 cup Ghirardelli Semi-Sweet Chocolate Chips (or one cup of anything else for muffin of choice)2 cups Gluten Free Organic Whole Ground Golden Flaxseed Meal2 tbsp cinnamon2 tsp baking powder1 tsp nutmeg1/4 tsp salt2 tsp vanilla extract
Preheat oven to 350 degrees and line your muffin pan with paper liners.
Combine Truvia and water in a bowl, set aside.
Combine dry ingredients (minus chocolate and Truvia) in a large bowl with a large whisk.
Melt stick of butter and whisk in eggs and vanilla extract in a separate bowl. Combine this with the Truvia/water combination and then mix with the dry ingredients. Once fully incorporated, fold in chocolate chip pieces. Fill paper cups 2/3 full.
Bake for 28-30 minutes or until toothpick comes clean.
Serving Size: Makes about 18 average-sized muffins
