Potato Vegetable Soup

1 small onion, chopped finely.5 tsp canola or olive oil (spray is ideal)3 cloves garlic, minced1 tsp tarragon, drieddash of black pepper3 potatoes, cut into 1/2 cubes4 cups vegetable broth (Rapunzel cubes are the best!)2 cups water1 cup celery, chopped1 cup carrots, chopped1 cup broccoli, chopped finely
Cook onions for 5-7 minutes on medium with a spritz of canola or olive oil. Add garlic, tarragon and pepper and cook for about another minute.
Add broth, water and potato--bring to a boil. Once the soup begins to boil, reduce heat so that the soup simmers. Let it simmer for 15 minutes. Add other veggies and simmer for 15 more minutes. Blend part of the soup to thicken the broth to your preferred consistency. Salt and pepper to taste!
