Thai Beef Salad

700g rump steak 1 tablespoon rice bran oil100g baby spinach leaves1 red capsicum (seeded and sliced finely)1 1/2 cups bean sprouts4 spring onions (sliced)1/2 cup coriander2 tablespoons chopped mintDressing2 tablespoons lime juice1 tablespoon fish sauce1 tabespoon soy sauce1 clove garlic (crushed)1 red chilli (optional)
Heat a grill plate to hot. Brush meat with oil (optional) and cook for 3-4 minutes each side (or cooked to your liking).
Place steaks on a plate, cover with foil and set aside for 5 minutes to rest. Meanwhile mix all dressing ingredients in a small bowl.
Slice meat across the grain into thin strips. place beef and remaining ingredients in a large bowl. Pour dressing over salad, then toss gently and serve immediately.
