Curry Chicken

Ingredients
1.5lbs Chicken thighs, boneless, skinless2 TBS (or to taste) curry powder (red or yellow)1 Cup Chicken Broth1 TBS Corn Starch2 Cup Prepared Brown rice
Directions
Cut the chicken thighs into bite size pieces, removing any easy-to-remove excess fat. Place chicken into a medium-sized pot and cook for approx 5 min. Stir in chicken broth and curry powder. Allow to simmer for 15-20 min to reduce broth. Whisk corn starch with a little of the cooking liquid and then add to the pot. Allow to thicken. Serve over brown rice with Sambal Oolek for an extra KICK!
