HCG Shrimp Cucumber Salad

3.5 oz. shrimp (about 8 large)coconut oil (optional - not in nutritional info)Dash each: Old Bay seasoning, freshly ground pepper1 cup cucumber slices1 tablespoon chopped red onion1 tablespoon minced fresh parsleyJuice of 1/4 lemonherbs and spices as desired
If using large shrimp, cut in half the long way to make thinner pieces. Stir fry in a little water or coconut oil in a non-stick pan. Sprinkle with Old Bay Seasoning and pepper. Chill.
When ready to eat, mix shrimp with one cup of cucumber slices (or more - raw cucumber is only 13 calories per cup). Add lemon juice, onion, and parsley, and any other herbs and spices that strike your fancy.
(I added a pickled garlic clove -- from my home pickled dill pickles)
