1lbs of Lean Ground Beef (96/4)Taco Seasoning (I 1/2 used a packet)1/4 cup of waterJarred Jalapenos - Your choice I used about 153/4 cup of Trader Joe's Chunky Salsa (Or make your own so you can control the sodium, I included my recipe below and it is in this calculations, not the chunky salsa - the calories are a little less with the homemade salsa)1/2 jar of Queso Cheese Dip (nacho cheese or use shredded)1/3 cup of Greek Non-fat Plain Yogurt3 Cups of shredded romaine lettuce2 servings of Tortilla chipsOptional ingredients:Scallions on topDiced Black OlivesShredded CheeseGuacamoleRefried , Black or Pinto BeansRiceSalsa Recipe, which is in the calculations2 Large Tomatoes - diced and seeded1/4 cup onion diceddash cumindash salt & pepper1/4 Jalapeno - diced small
In a frying pan, add ground beef and cook until done, add seasonings and cook according to manufacturer directions or add your own seasoning and add about 1/4 cup of water. Cook until water is evaporated.
Time to Layer!
In a pyrex dish or a large dish add the following in order:
Tortilla Chips
Ground Beef
Jalapenos
Cheese
Salsa
Greek Yogurt
Lettuce
Tomatoes
Thats it, a quick meal in under 20 minutes!
