Curried Apple Carrot Ginger Soup

Ingredients
8 carrots, chopped2 apples, cored & chopped1 medium onion, chopped1-2 tsp fresh ginger, sliced thin1 Tbsp margarine1/2 tsp salt1/4 tsp white pepper1 Tbsp coconut curry powder5 cups chicken (or veg) broth1 Tbsp sweetener (optional)
Directions
Melt the margarine in a soup pot, then saute the onion, apple, ginger and carrots until the onion is translucent - about 5 minutes. Add the curry powder, salt & pepper, optional sweetener and broth. Bring to a boil, reduce to medium heat and cook for 20 minutes. Use an immersion blender to create a thick consistency or blend in batches.
