Stuffed Chicked Wrapped in Prosciutto

2 Chicken Breast - Halved2 oz part skim Mozzaralla Cheese2 oz Prosciutto2 TBS Pesto
Halve chicken breasts, remove the tenders (not needed in this recipe).
Lightly pound the chicken to approx 1/3 inch.
Lightly salt and pepper each breast
Smear thin layer of pesto on one side of each breast
Add layer of grated cheese and roll up breast.
Lay breast on Prosciutto and roll to cover.
Place seam side down in roasting tray.
Bake 375 for 25 minutes or until done but still juicy.
Serve with Pasta and Salad.
