Chicken Rice Bowl

16 oz boneless, skinless chicken, cubed & cooked with Pam cooking spray1 Cup (uncooked) Instant Brown Rice (makes approx 1 1/3 cup cooked rice)1 Cup Salsa1/2 Cup Fat Free Shredded cheddar cheese1 Cup Green Pepper chopped1 Cup Red Pepper chopped8 Tablespoons Fat Free Sour Cream
Spray skillet with Pam cooking spray. Cook Chicken until golden brown.
Cooked Instant brown rice per instructions on box.
Divide rice into 4 equal serviings
Divide cooked chicken into 4 equal portions and put on rice.
Add 1/4 cup of Salsa to each
Add 1/8 cup of Fat Free Shredded Cheddar Cheese
Add 1/4 cup Chopped Green Pepper
Add 1/4 cup Chopped Red Pepper
Top with 2 Tablespoons of Fat Free Sour Cream
You can add other veggies that you would prefer but you have to recalculate...
