Laura Dolson's Strawberry Vinegarette

Ingredients
1/2 cup sliced strawberries, 1/2 cup olive oil, 1 tsp mustard, 2 tbsp of red wine vinegar, salt and pepper to taste, sweetener to taste (this is NOT actually needed, but you might like it a little sweeter).
Directions
Puree strawberries in blender or food processor. Add vinegar, mustard and seasonings. Blend, then add olive oil. Blend until creamy, then taste and add seasonings as needed.
