Pork Loin in Tomatillo Sauce

Ingredients
2 T. Canola Oil2 lb. Pork Tenderloin Roast, trimmed of fat2 Medium Onions, raw, chopped5 Cloves Garlic, minced1 Jalapeno Peppers, minced1 Anaheim green chile, minced1 C. Green Tomatillo Salsa0.5 C. Low Fat Low Sodium Chicken Broth
Directions
Heat oil in a large skillet and brown all sides of the pork loin roast. Remove from pan and place in slow cooker. Season roast all over with salt and pepper. In the same pan, cook onions, jalapeno and Anaheim chiles, and garlic with a pinch of salt until soft. Add vegetables to the slow cooker. Add tomatillo salsa and chicken broth to the crock, cover and cook on LOW 6-7 hours or until the center of the roast is 165F when measured with a meat thermometer.

    DH and I made this as is and it was delicious. Later DH cooked it with chicken instead of pork and shredded the chicken to make nachos for a party. Our guests loved it! - 7/28/13
