Quinoa & Ground Turkey Stuffed Peppers

Ingredients
3 bell peppers1 c cooked quinoa1/2 lb. ground turkey cooked and drained2 tsp minced garlic1 Tbsp. olive oil1/2 c shredded mozzarella cheese (part skim)1/4 c chopped sundried tomatoes1 c shredded zucchini1/4 onion finely choppedsalt and pepper to taste
Directions
Cut peppers in half lengthwise and clean out seeds and guts. Mix all other ingredients in a bowl. Spray cake pan with olive oil spray. lay peppers in pan and distribute meat/quinoa mixture evenly. Bake covered for 30-45 minutes.
