Black-Eyed Pea and Corn Relish

Ingredients
1 can of Green Giant shoepeg white corn, drained1 can of blackeyed peas, drained1 medium onion chopped1 sprig parsley chopped2 Avocados diced1 tsp olive oil (extra virgin if you wish)1 tbsp white wine vinegar1 tsp salt1 tsp black pepper 1 tsp ground cuminjuice of one lime
Directions
Drain juice from corn and blackeyed peas and dump into a bowl, chop the onion and add, dice the avocados and add to the mix. add remaining ingredients and let sit in the refrigerator till needed.
Serve with crisp tortilla chips,
or green or red peppers chunked
