Asian Chicken Lettuce Wraps

Ingredients

500 grams ground chicken1 tsp minced garlic1 tsp grated ginger1 large carrot1 red bell pepper1 yellow bell pepper2 scallions1/2 large green apple1 tsp canola oil2 tbsp hoisin sauce1 tbsp low sodium soy sauce1/2 teaspoon sesame oil1/2 tbsp rice wine vinegar1/4 tsp ground pepper
Dice vegetables and apple and prepare other ingredients. Heat wok of pan on high heat. Add ground chicken and cook until almost done. With spatula, make room in the center of pan to fry the aromatics. Add canola oil and cook garlic, ginger and scallions until fragrant, about 10 seconds.
Add peppers and cook just a minute until slightly softened. Add remaining ingredients except the apple. Mix well and heat through, adjust flavoring if needed.
Add apples. Toss to coat and immediately remove from heat so as not to cook the apples. Serve with Lettuce cups.
