Zucchini Pie

Ingredients
3 Cups thinly sliced zucchini (peeled or unpeeled)1 small onion, chopped1 Cup Bisquick mix1/2 Cup Shredded Cheddar Cheese or grated Parmesan4 eggs ( can use egg beaters)2 TBSP Vegetable Oil1/2 tsp dried parsley1/2 tsp dried marjoram1/4 tsp salt1/4 tsp white pepperCrisco Shortening (to grease pie pan)1 - 2 TBSP dried breadcrumbs
Directions
Mix all ingredients together in a large bowl until zucchini is evenly coated. Pour into greased then bread crumbed 9" pie plate or 10" x 6" baking pan. Bake in preheated 350 degree oven for 45 minutes or until golden brown and baked through. You can tell it is set if a knife inserted in the center comes out "clean".
