Spicy Fried Pollock

1 egg1 tablespoon milk1/2 cup flour1/4 teaspoon cayenne pepper2 tablespoons grated parmesan cheese4 pollock fillets1 cup crushed corn flakes
1. Combine egg and milk.
2. Then spread flour, cayenne and cheese on a plate.
3. Season each fillet with salt and pepper.
4. Dip fillet in egg mixture, then in flour mixture, then in corn flakes.
5. Place on a baking sheet lightly sprayed with nonstick cooking spray.
6. Bake at 450°F, 10 minutes per 1 inch fillet or until fish flakes easily when tested with a fork.
