Healthy Chicken Chili

Ingredients
1 Whole boneless chicken breast4 tbs olive oil2 zucchini2 summer squash2 cans diced tomatoes (plain or w/chilis)1 can black beans1 Package of you favorite chili seasoning
Directions
Heat olive oil in large skillet. Add chicken, cook over medium heat until lightly brown on both sides. Slice zucchini and squash, add to pan. Stir and cook til squashes are lightly browning and beginning to soften. Add all other ingredients. Bring to a boil, then lower heat and simmer stirring occasionally, breaking up chicken with spoon as you go. When the chicken falls apart in shreds, dinner is ready!
Note: cutting up chicken ahead of time will reduce cooking time, but I feel the flavors blend more the longer it cooks. Reheats very well.
