Zucchini Applesauce Mini Muffins with Splenda

3 eggs1/2 c. oil2 tsp. vanilla2 c. sugar2 c. grated zucchini3 c. flour3/4 tsp. salt1 tsp. baking soda3 tsp. cinnamon3/4 tsp. baking powder1 1/2 c. applesauce
Beat eggs until light. Add sugar, vanilla and oil, blend well. Stir in applesauce and zucchini. Mix flour, baking soda, baking powder, salt and cinnamon. Blend with creamed mixture. Spoon into Mini Muffin Pan. Bake at 350 degrees for 13 minutes or until toothpick inserted in center of muffin comes out dry.
