Kasey's Chicken Fried Rice

4 cups Minute Rice4 Chicken Breast, boneless, skinless1/2 Bottle Kraft Asian Toasted Sesame2 tbsp cayenneGreat Value Frozen Mixed Vegetables (32 oz bag)1 tbsp Olive Oil
1. Cook rice, either in microwave or on stove. After it's cooked, put rice in a large bowl and let cool.
2. Dice Chicken into bite size pieces. Heat oil in deep skillet. Cook chicken until almost done. Mix together dressing and cayenne pepper. Pour over chicken. Cook for 5 minutes with lid on. Add frozen vegetables (still frozen is ok). Cover and cook for 10 minutes, or until vegetables are almost cooked through. Remove lid and simmer until it the vegetables are done cooking, about 10 minutes. The sauce should thicken as well.
3. Pour chicken and vegetables over rice and mix well. Let sit for 10-15 minutes to cool and let the juices be absorbed by the rice. Stir every 5 minutes during this time so the rice gets coated evenly.
Serving Size: Makes about 8 servings
