Avgolemono - Grandma's Recipe

Ingredients

1 big can (48oz) of Chicken Broth4 bags of Boil-in-Bag White Rice (or 8 cups cooked white rice)8-10 eggs Salt & Pepper to taste~2 cups (to your taste) of Lemon Juice
Warm up the broth in a large soup pot while cooking rice separately as per instructions.
In a large bowl crack the eggs
VERY VERY SLOWLY, fold in the warmed broth into the eggs, while stirring (so that it folds in and the egg doesn't scramble up and 'cook')
When all of the broth is added to the eggs, transfer that mixture back into the large soup pot.
When the rice is finished cooking seperately, stir it into the large soup pot where you had the broth/egg mixture.
Add the lemon juice (to taste, I like mine lemony!) and salt and pepper to taste
Simmer while stirring for a little bit (5-10 minutes)
