6 tsp (2 tb) rice wine vinegar6 tsp (2 tb) splenda3 tsp (1 tb) garlic, minced3 tsp (1 tb) dijon mustard1 tsp ginger root, mincedsalt and pepper, to taste~2 cups (1 bag) shelled edamame, steamed and cooled1 medium cucumber (preferably English) - seeded and cubed1 bunch scallions (about 1 cup) - chopped1 red (yellow or orange) bell pepper - diced
Makes about 6 half-cup servings
For dressing:
Combine vinegar, splenda, garlic, mustard, ginger, salt and pepper. Adjust to you taste...I like it kind of tart, if you want it sweeter add more splenda.
Combine edamame, cucumber, red pepper and scallion in a bowl. Add dressing and mix to combine. Chill about an hour or overnight.
