Vanilla Yogurt Banana Muffins

Ingredients
1 extra large egg and 2 extra large egg whites3/4 c. sugar1 cup mashed ripe bananas, about 3 (I used 4)1/3 c. lowfat vanilla yogurt1 T smart balance buttery spread1 T vanilla extract1 3/4 c. all purpose flour2 t baking powder1/2 t baking soda1/2 t salt
Directions
preheat oven to 325. Using electric mixer beat egg, egg whites, and sugar in large bowl until thick and light, about 5 min. Mix in smashed bananas, yogurt, butter, and vanilla. Sift flour, baking powder, baking soda and salt over mixture; beat until just blended. Transfer batter to papercup lined muffin tin and bake until golden brown on top and inserted toothpick comes out clean. about 25 min.
