Mini Cornmeal Bran Muffins

2 tbsp olive oil2 tbsp unsweetened applesauce1 egg1/2 cup Greek yogurt1/2 teaspoon salt 2 Tbsp. honey1/2 teaspoon baking soda 1/4 cup cornmeal 1/3 cup protein powder1/4 cup oat bran 1/2 cup whole wheat flour
Measure the oil and applesauce into a large bowl. Crack in the egg and add the yogurt. Beat with a whisk until thoroughly combined. Add the salt, sugar, soda, cornmeal, protein powder and flour. Stir lightly. When mixed, but still lumpy stop stirring. Oil up the muffin cups. Divide the batter evenly amongst the muffin cups. Bake at 400° for about 15 minutes. Remove from the oven and cool slightly before eating.
