non-dairy salmon souffle pie

1 cup fine cracker crumbs1/4 c butter, melted1/4 tsp dry dill weed1 8-oz cooked salmon, or canned salmon1 12.3 oz package firm lite tofu3 eggs, separated1/2 cup soy milk2 T flour1/8 tsp pepper1 T chopped chives1 tsp lemon juice
Stir together cracker crumbs, melted butter and dill weed in a 9 in pie pan. Press over sides and bottom of pie pan. Reserve. Turn salmon into a mixing bowl; add tofu and egg yolks. Beat until well-mixed. Stir in soy milk, flour, pepper, chives and lemon juice. Beat egg whites until they hold stiff, straight peaks; Turn into reserved crumb crust. Bake in 375 degree oven for 30 minutes. Remove and let stand for 5 minutes. Makes 8 servings.
