Harvest Apple Cake

3 Cups Chopped Apples 1/2 Cup Granulated Sugar1/2 Cup Brown Sugar2 Tablespoons Softened Butter1/4 Cup Egg Substitute (Egg Beaters)1/2 Cup Chopped Pecans1 Cup Flour1 Teaspoon Baking Soda1 Teaspoon Cinnamon1/4 Teaspoon Nutmeg1/4 Teaspoon Cloves1/4 Teaspoon Ground ginger
Preheat oven to 350 degrees.
Peel, core and roughly chop apples, set aside.
Combine butter and sugars in a large bowl and cream together. Add egg substitute and mix well.
Combine dry ingredients and add to wet mixture. Mix well. Batter will be very stiff.
Add apples and pecans, mix well.
Spread into a 9X13 pan that has been sprayed with cooking spray.
Bake at 350 degrees for about 40 minutes.
Cool on a wire rack, serve warm or cold.
Serving Size: Makes 18 pieces.
