Mel's breaded chicken cutlet strips

Ingredients
1 large boneless skinless chicken breast1/4 cup idahoan instant garlic mashed potato flakes1/2 cup french's fried onions (crushed)pepperdash of oregano and basil (optional)lite mayonaise
Directions
butterfly chicken breast so you have two thin pieces of chicken

place chicken in a ziplock freezer bag and lay flat on the counter

using a meat tenderizer, pound out the chicken breast to about 1/2 in

cut the two pieces into strips or smaller chunks

in a seperate freezer bag, combine potato flakes, crushed fried onions, pepper, basil, oregano

spray baking dish with pam cooking spray

brush each piece of chicken with lite mayonaise

drop chicken into bag of dry ingredients, shake around until it is completely coated- repeat with remaining chicken

place in baking dish and bake at 350 for 25-30 min (depending on how big your pieces of chicken are)

If you like it a little crispy, turn on the broiler for the last few minutes of cooking, you may flip and broil the other side as well.
