Prosciutto-Wrapped Mini Turkey Loaves

2 tsp. olive oil1 medium onion, chopped2 garlic cloves, minced1 large egg3/4 tsp. dried thyme1/4 tsp. black pepper5 Tbsp. honey mustard, divided1-1/2 tsp.Worcestershire sauce20 oz. ground turkey, 93% lean1/2 c. nonfat plain Greek yogurt1/2 c. crushed saltine crackers (about 10)6 thin slices prosciutto (3 oz)
Put oven rack in middle position and preheat oven to 450 degrees F. Heat oil in a medium skillet over medium-high heat. Add onions; saute until lightly brown, 4-5 minutes. Add garlic; saute a minute longer, set aside.
Mix egg with thyme, pepper, Worcestershire sauce and 1 Tbsp of the honey mustard .
Place turkey in a medium bowl; add yogurt, crackers and onion; mix with a fork until evenly blended. Add egg mixture; blend well.
Turn meat onto a work surface. With wet hands, divide and form into 6 loaves, about 4.75 oz each; brush with remaining mustard. Wrap a prosciutto slice around each loaf. Place on a grid-style wire rack set over a foil-lined rimmed backing sheet.
Bake until golden, about 25 minutes. Remove from oven; let rest for a few minutes. Serve with a fresh tossed salad.
