Mediterranean Pasta with Shrimp

8 oz whole-wheat pasta1 clove garlic, minced1 large onion, chopped2 Tbsp sherry or white wine2 Tbsp chicken broth1/3 cup chicken broth1 can (16 oz) reduced-sodium stewed tomatoes (with juice)1 jar (15 oz) water-packed artichoke hearts, drained2 tsp dried Italian seasoning1/4 tsp ground black pepper1 lb medium shrimp (40-50), shelled and de-veined
1. In a large pot of boiling water, cook the pasta according to the package directions.
2. Meanwhile, coat a large non-stick skillet with non-stick spray. Add the garlic, onions, sherry and 2 Tbsp of the broth. Cook, stirring, over medium heat for 5 mins, or until the onions are tender.
3. Add the tomatoes (with juice), artichokes, italian seasoning, pepper, and the remaining broth. Add the shrimp and simmer, uncovered, for 3 mins, or until the shrimp turn pink.
4. Drain the pasta. Serve topped with the sauce.
