Ingredients
12oz firm tofu1 3/4 cups water1/4 cup oil1/4 cup soy sauce1/4 cup nutritional yeast1 tsp smoked paprika2 tsp onion powder1 tsp garlic powder1 tbsp salt2 tbsp hickory liquid smoke1 tbsp (or more) maple syrup1/2 tsp red food coloring 3 1/4 cups vital wheat gluten
Directions
Get water steaming in your steamer. You will need a large steamer.
1. Place all ingredients except the gluten flour in a blender and process until very smooth. Pour into a bowl. Add gluten flour and work into a dough. Knead for a few mins to let gluten develop.
2. Divide the dough into two equal pieces and shape each piece into log and wrap in heavy duty foil like a tootsie roll. Try to make the roll as thick as possible. Steam for 1 hour.
3. Preheat oven to 350 degrees in the last 15 mins of steaming. Remove seitan from steamer and bake on a cookie sheet for 40-50 mins. Seitan should swell and press against the foil.
4. Cool and slice as needed for sandwiches. This seitan holds up very well and can be shaved very thin. Store in the fridge or freezer. This recipe makes a lot, so you can cut it into 3 or four chunks and store them away for later.

Fabulous recipe--made it about 4 times now. Wondering if anyone has tried steaming it in an Instant Pot (or other pressure cooker)? If so, how long did you steam it? - 10/13/19

I made this for Christmas, glazed it like a regular ham. My husband and best friend loved having their own ham. I think I was short on the food colouring though, as it turned out standard seitan-brown.
From an omnivore's perspective, the flavour was good, but still had undertone flavour from seitan - 12/25/18

Better than what you find in the stores and easy to make. - 7/8/18

The liquid smoke was too strong at first, but after letting it sit in water for a couple of days and draining it, it was great. - 3/24/18

I prepared this vegan ham yesterday and it was fantastic. I know people are not big on using artificial food coloring, but the dye actually makes this ham look just like the real thing! Delicious! - 1/2/17
